Cinnamon Carrot Apple Bread
I canβt help but want to dance through the end of September every time I take a bite of my cinnamon apple carrot bread ππ»π₯ππ₯ππ»
The onset of fall brings a crispness to the air that immediately makes me want to make my way to the nearest apple orchard. According to Ayurveda, apples are Rechana (laxative) in nature when they are cooked. Eating apples first thing in the morning helps ignite our internal flame (agni) and keeps it going strong throughout the day to aid in proper digestionπ₯π₯π₯
Adding spices to our meals is especially important now as the majority of spices are warming in nature. Keeping the body warm from the inside out is critical for maintaining our immunity as the temperatures start to drop π¨π

CINNAMON CARROT APPLE BREAD:
INGREDIENTS:
π1 large egg
π1/2 cup brown sugar
π2 tbps vanilla extract
π2 tsps cinnamon
π1 tsp cardamom
π1/2 tsp clove
π1/2 tsp ginger
π1/3 cup coconut or olive oil
π1/2 cup almond milk/milk of choice
π 1 cup all-purpose flour or gf flour
πPinch of salt
π3/4 tsp baking soda
π1 cup apple, peeled and shredded
π1 cup carrots, peeled and shredded
π 3/4 cups walnuts or pecans, chopped
INSTRUCTIONS:
β¨Preheat oven to 350 degrees
β¨Grease one 9x5 inch loaf pan, set aside. In a large bowl, add the egg, vanilla extract, cinnamon, cardamom, clove, oil, milk and whisk to combine.
β¨In a medium bowl, whisk together the flour, baking soda and salt and set aside
β¨Add the wet ingredients to the dry ingredients and fold with spatula or stir gently with a spoon until just combined; donβt overmix.
β¨Add the carrots, apples to combine
β¨Sprinkle in the chopped nuts and mix to incorporate
β¨Pour into prepared pan and bake for about 40-45 minutes or until the top is golden brown
