Baked Stuffed Cinnamon Apples

I am seeking comfort in food in more ways than one these days and waking up to my stuffed baked cinnamon apples gives me all of the cozy feels

According to Ayurveda, eating fruits helps nourish rasa, the nutritional fluid of the body and the first of the seven body tissues. Eating fruits requires practically no digestion and helps to increase ojas, the finest by-product of digestion that enhances immunity and absorption of nutrients. By warming the apple, the pectin from the fruit aids in digestion to cleanse your system and eliminate impurities. Adding cinnamon into the mix helps clear toxins or Ama from the body due to the super spice’s inherent warming qualities which promotes healthy circulation and reduces respiratory passages.

Ingredients:

  • 3 large baking apples, such as Honeycrisp

  • 1/4 cup coconut oil

  • 1 tablespoon cinnamon

  • 1 teaspoon ginger

  • 1 teaspoon nutmeg

  • 1/4 teaspoon salt

  • 3/4 cup oatmeal

  • 1/2 cup nuts (cashews, almonds, pecans, etc), chopped

  • 1 tablespoon apricot preserves

  • 1 tablespoon almond butter

  • 1/4 cup coconut milk (optional)

Instructions:

  1. Preheat the oven to 385 degrees F.

  2. Wash and core apples, leaving enough of the core at the base of the apple to contain the filling.

  3. Place a sauce pan on medium-high heat. Add the coconut oil and let it melt before adding the cinnamon, ginger, nutmeg, and salt. Let the spices integrate with the oil for about 10 seconds before adding the oatmeal and nuts. Stir into the oil until the oatmeal and nuts are covered. Then stir in the apricot preserves and almond butter and stir until incorporated.

  4. Place the apples upright in the dish. Bake until the apples are soft and the filling is browned, about 45 minutes
